Chocolate Avocado Pudding - GFCFSF

Recipes from the GFCFSF Autism Live Cooking Show – WHATS LEFT?

Ingredients
1 cup sprouted pecans
4 tablespoons coconut butter or oil (warmed)
¼ cup organic honey
1 ¼ cups filter water
¼ cup plus tablespoons of cocoa powder
¾ teaspoons sea salt
2 teaspoons vanilla extract
2 medium avocados

Instructions
1) Process pecans in food processor until smooth, adding 2 tablespoons of the coconut oil or as much as needed
2) Place pecan butter, honey, water, cocoa powder, salt and vanilla extract in blender. While it is running slowly add in the remaining 2 tablespoons of coconut oil. Add the avocados and blend until smooth.
3) Some will want the pudding to be sweeter. This recipe is less sweet side. You can add more honey to taste.

Yield serves 4-6
