German Cabbage with Apples - GFCFSF

Approximate cooking time about 25 min.

1 tbsp animal fat (lard, bacon fat, duck fat, etc.) or oil
1/2 head green or napa cabbage, shredded
1 granny smith apple, peeled and chopped
1 teaspoon caraway seeds, optional
3/4 cup chicken stock
1 tbsp apple cider vinegar
Salt and pepper, to taste (cabbage needs tons of salt. Maybe 2 tsp salt + 1 tsp pepper on top of stock sodium)

1. Heat fat or oil over medium heat in a large skillet. Add cabbage, apple, and caraway, if using. Sauté until cabbage just begins to wilt, about 8 minutes.
2. Add chicken stock and apple cider vinegar and bring to a boil. Let simmer, uncovered, until cabbage is soft and stock reduces, about 15 min. Season to taste.
