Killer Crabcakes - GFCFSF

1/2 cup cup GFCFSF mayonnaise
1 teaspoon Old Bay seasoning
2 chicken eggs or 1 duck egg
1 tsp. Tabasco sauce
1/2 tsp. each salt and pepper
2 Tablespoons minced parsley
2 pieces GFCFSF *bread, ground up in a coffee grinder
1/4 cup minced red onion
1 clove garlic, minced
1 lb. jumbo lump crab
light oil for frying

Mix all of the ingredients - except the crab and oil - really well. Gently fold in crab until incorporated but chunks remain. Form into patties, cover and refrigerate at least 20 minutes to firm them up. You can make them the day before cooking too.

Heat oil on medium heat. Cook patties until lightly golden, about 4 minutes on each side.

*I use fresh (not dried) breadcrumbs because they are smoother and create the bonding without the thick feeling of dried.
